Zesty Minestrone Soup
- 1/4 cup italian salad dressing
- 1 cup chopped onions
- 1/2 cup chopped carrots
- 1/2 cup chopped celery (about one stalk)
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 can (19 oz) canneli beans or butter beans (I use both)
- 2 cans vegetable broth
- 2 cups water
- 1 tsp. italian seasoning
- 1 1/2 cup small shell macaroni
- 1/2 cup grated parmesan cheese
- Heat dressing in a large non-stick skillet on medium heat. Add onions, celery, and carrots. Cook 2 minutes, or until crisp tender stirring occasionally. Spoon into slow cooker. Add tomatoes, beans, broth, water, and italian seasonings. Stir and cover with lid.
- Cook on low for about 6 hours or high for 3 hours
- Stir in macaroni. Cook for 10-15 minutes.
- Sprinkle with cheese just before serving. Then eat and enjoy!
